Simply superb. Just had dinner here and was blown away. The food strikes a perfect balance between innovation and tradition, such as the roasted pidgeon with sugarcane glaze and the fish maw rice with morels. Even though there were more than 10 courses, the portion sizes were just nice as I left feeling full and well fed but not sick. service was also through the roof. They served a thick almond soup, and when the waitress saw me with my half drunk soup, she asked me why I was not a fan and I said that I did not like almond cream flavoured foods. Within the next 10 minutes she served a bowl of chicken soup of similar creamy consistency. While the chicken soup was wonderful, what really blew my mind was the thought that she put in to serve me a different soup. Also, the last course consisted of delicious fresh cut fruit and they offered to serve us extra if we wanted. We asked for more mangosteen and mango, and they served us anther portion that could only be described as generous. Overall, I had an fantastic experience dining at Wing and it is only apt that this is the top restaurant in Hong Kong. Side note, their toilet is sparkling clean and the interior design is beautiful - topped with Aesop soaps, mouth wash, lotion, q tips and floss sticks. I think they have a staff member to top up their rolled towels every time a guest leaves the toilet. You can tell from all the little things that they do, that Wing goes above and beyond just the gustatory to enhance your experience at their restaurant.
