A very interesting vegan restaurant offering a fine-dining-style menu. We were pleased to be served by Dina (or Dinah?) who was very friendly and a great host, with great presentation skills (keep this guy in the staff!). The 9-course tasting menu was really good, providing a fantastic combination of flavors.

My only critique are 2 things:

1) the environment was a bit loud (both due to people talking and the background music which was a bit too punchy) so the place would benefit by some acoustic treatment, as we had a hard time hearing waiters' explanation of the dishes.
2) One of the staff members was reprimanding several waiters for different things (one being a glass not perfectly shiny, judging from the faces he was making). I don't like seeing people being reprimanded, specially not when they were 1 person short that day and you could clearly see them running from table to table making their best efforts. All of the waiters that served us were great and friendly, so this was totally unnecessary.

Will be looking forward to returning soon!

PS: sorry about the desert picture, we ate 2 before realizing we forgot to take the picture :)

10/10 for all aspects of fine dining!! Definitely worthy of a star. The food was amazing from start to finish. We did the “full experience” and it was well worth it! The wine pairing wasn’t my favorite, though they did introduce a wide array of very hard to get wines from all over Europe. Just not my taste in wines per se, but that’s not at the fault of the restaurant. Highly recommend if you’re looking for a fine dining vegetarian/vegan experience in Copenhagen!

An extraordinary meal with a tasting of superlatives wines combined together to create an amazing dinner.
Highly recommended.
I wished I had taken more pics but the food was so good that we were too eager to dig into it.

The Michelin green star is truly for the sustainability not the flavor. Please don’t come if you are look for a good food trip.

So salty! The flavor is not balanced! And the service is rather arrogant.

The reviews seem to be fine on trip advisor and Google map. But unfortunately I am very very disappointed.

I have dined in more than 15 Michelin starred restaurants, including some 3 star and 2 star restaurants. I have never encountered any situation like this of many dishes being very salty.

After the first dish, I told the waiter to let the kitchen reduce the salty level.
But many of the coming ones are
still very salty. It is until the main course, the oyster mushroom, I can no longer bear it. Everything is salty from the mushroom to the sauce to the quinoa in the accompanying dish. I could barely finish the dish, and left most of it untouched.
Here comes the drama. You know what the manager says? “We have already reduced the salty level after you told us. This is how we serve things.” No one can be more arrogant and disrespectful than this.
Then I told them that I have dined in more than ten Michelin starred restaurants and such case has never happened. They seem to be more humble after that. They listened to my opinion on the desserts, on which I found to have obvious unbalance/technical problems.

Despite the salty problem, it is still far from a Michelin starred restaurant. Using fermented/ pickled veggies/fruits is alright, but when it comes to be the main part, it is not acceptable for my taste. The flavor is too invasive and strong, even if there is custard/cream.
For example, one dish has custard on top, with soya sauce flavor, and marinated Brussels sprouts, chestnut. The combination of Brussels sprouts and chestnuts is nice, but the Brussels sprout is more like a pickled veggie. It is ok to have such things as a decoration on top of something, but they use it as the body part.
Another dish, the main dessert, has similar problem. The combination of artichoke cream, apple, and ginger is good, but the apple it too sour that it became not balanced. I would reduce the amount of marinated sour apple, or use not only the marinated ones but also some fresh ones to increase the freshness and sweetness.

There are many more problems that I can say about their dishes. Some plates are just flat and in lack of interesting harmony of flavors and textures. The potato with lovage, has a strong lovage herbal taste, but other than that it is just a potato dish. The leek dish is really flat, they use seaweed spinach sauce and mushrooms as a topping of the leek, but the leek is still the strongest part and other flavors fail to cooperate with the leek. I can make grilled leek like this as well honestly.

The green star is literally just for the sustainability, not for the flavor. If you look for well-balanced flavor, texture, a symphony of food, never come here. They don’t seem to pursue a Michelin star on flavor.

They gave me a 15% off discount in the end but the price is still high. With around 140 euros you can have a decent Michelin starred meal in Paris. This is not even close to a Michelin recommendation restaurant.

But some parts of some dishes are nice. And they accommodate gluten free diet. The gluten free bread is one of the best gluten free bread I have ever had. And the accompanying onion soup is nice(although a little salty, too much soya sauce). The appetizer snacks are well balanced and even a little surprising.
The potato pound cake part is not bad. I have never tasted the lovage herb before.
The ice cream in the pre dessert is nice(although the gluten free version of pumpkin dumpling is a failure, whose skin is too hard and dry. I make gluten free desserts and I know it can be much better than this). The artichoke cream combined with a little sour apple and ginger oil is nice.
The service is friendly if you don’t tell them any problems.(When you tell them some problems, problems of the service and the attitude of the restaurant occur.)

Amazing vegan tasting menu. We had it with the non-alcoholic pairing, which was great! Everything was local/in season. The service was impeccable and I would highly recommend to vegans and non vegans for an unforgettable experience!

Ark is a plant-based restaurant with a modern, creative cuisine. The room is large with an open bar in the center, tables are arranged in different sections that allow for some privacy.
There is no menu to choose from, only a set menu that is presented by the service staff. Courses are very savory, to the extent that it is hard to believe that there is no meat involved.
A wine pairing with mostly natural/orange wines is offered, but also a non-alcoholic pairing with fermented, infused, or mazerated juices or teas. You can tell that creating these flavor-intense drinks requires a lot of experimenting!
The restaurant was awarded a green michelin star for aiming at waste reduction and sustainable sourcing, yet the food's taste is still the biggest focus. Creating strong, umami flavors with plants is not easy, but worked very well, especially with the mushroom dishes.
Service was very friendly and presented their food and drinks with a lot of passion. While the style is rather casual, service is very professional.

Very delightful dishes and surprising (ie good/pleasant) experience with veg forward sustainable and responsible cuisine. Vegan cuisine at its peak. As an omnivore, I give 5 stars for making it a delicious and unique experience. Service beyond all expectations, courteous, attentive, very responsive. This has been the most memorable experience for me in Copenhagen.
