Next, we savored the Farmhouse Camembert Berlingot with celeriac dashi infused with Liberia coffee. This dish was an absolute stunner, with every element working harmoniously. The celeriac dashi was incredibly tasty, and the berlingot was a work of art.
The third course featured Brittany sole cooked on the Japanese barbecue, accompanied by tonka bean and cinnamon potatoes, mussels, and a buckwheat and Meyer lemon-infused iodic velouté. The flavors in this dish were simply amazing, a true cooking masterpiece.
